CARROT RICE

INGREDIENTS:

3 cups cooked plain rice.
11/2 cup grated carrots.
3 green chillies sliced.
1 medium onion sliced.
½ cup fresh grated coconut (optional).
Fresh coriander leaves for garnish.
¼ cup oil to fry.
½ tspn mustard seeds.
1-2 tspn channa dhal ( split chick peas).
15-20 kajju sliced (optional).
Curry leaves.
¼ tspn turmeric powder.
¼ tspn hing (asafeotodia).
Salt ( according to taste).
1 tspn lemon juice.

First take a big broad container and spread the cooked rice and set it aside.
Take a sauce pan and heat it, When its warm add oil to it and let it get warm. When the oil is warm enough add mustard seeds to it and allow the seeds to crack, later add channa dhal and kajju to the oil and fry till light brown, then add curry leaves,turmeric powder and hing to it and fry for a second. T hen add onion and sliced green chillies and fry, when the onions are half cooked add the grated carrot, fresh coconut and salt to it and mix well and fry till done.

Now when the carrot mixer is ready, mix it to the cooked rice which was already spread in a container . Mix well and add lemon juice to it and remove the rice into a serving bowl and decorate with the fresh coriander. Serve it hot with any curry or raita.

This rice item is good for health and very easy to do.
